Salty Veggie Base


Red Onions 450gr
Unrefined sea salt 500gr
celery 300gr
carrots 450gr


Here is an “always-to-hand” preparation!
If you often find yourself arriving home late in the afternoon and with just half an hour to: prepare the dinner, bathe the kids, set the table, and maybe even remove the laundry from the washing machine, here are some key ingredients that deserve a special place in your fridge. All you need is a grinder and just a few minutes. I do prefer to buy organic vegetables which keep a strong flavor. Chop up the vegetables one kind at a time and then mix them all together with the salt. Put the mixture in a glass jar (with this amount of ingredients you can make 3 to 4 jars) and keep it in the fridge. It can now stay in your fridge forever, seriously. This will be a simple useful base for many dishes, from soup to risotto to sauce. The amount you use depends on your taste, usually one teaspoon is enough but be careful with the salt… you can adjust it at the end of the cooking as the salt in the base should usually be enough.

This is the very first step for your dishes, consider it as being the same as using a stock cube but it is more healthy.
